Lemony Blueberry Biscotti Bread

I love having things like, home made biscotti on hand to snack on. I have always been a big fan of making my own snacks. I love to know what is in the food I'm eating. Most of the time, I'm not a fan of highly processed food at all. Don't get me wrong, I love a good salt and vinegar chip. I just prefer and enjoy, to make my own snacks.

I love to bake, rain, hail or beautiful sunshine. It makes me smile, well only when the baked goods turn out, otherwise....... :(

This is my way of making biscotti. I start with making a couple small loaves of blueberry bread, and use that to cut thin slices. I'd freeze one whole loaf, and use the other for biscuits.

This amount makes 2 quite small loaves, but I like to have small, delicate, but crisp melt in your mouth biscuits. Fantastic with a cup of coffee.

80 grams butter
3/4 cup brown sugar
2 eggs
1 3/4 cup plain flour
1/4 nut meal, I used almonds and crushed them myself
zest from 1 lemon
1 cup fresh/ frozen blueberries
1/3 cup slivered almonds, toasted
2 teaspoons baking powder
1 tablespoon yoghurt

For the Lemony Blueberry Bread

preheat the oven 170C.
cream the butter and sugar together, add the eggs one at a time.
add the rest of the ingredients and mix this by hand
bake for 45 minutes, in a loaf tin.

For the Biscotti

Turn the oven up to 190C.
Slice as thin as you can, and place them on a baking tray. Bake these for 6-8 minutes to dry out to form a biscotti. The more you bake them the crunchier they become, just be careful not to burn them.

  1. How versatile!! Biscotti is divine, as is lemon & blueberry. I shall give this a go, thanks Leah :) x

  2. Oooh ooh ooh! I adore biscotti *and* almond bread, which this reminds me more of, actually! I'm actually eating biscotti right now (love the coincidence!) but it's store-bought coffee biscotti from the local IGA. Not quite so virtuous ;)

  3. I love biscotti. Great that you make your own. And blueberry flavour would be delicious.

  4. I like snacks that go well with a cup of tea and these definitely fit the bill! :)

  5. ME TOO Hannah! Ohhh coffee biscotti is a great idea, i might try that next time!

Thanks Hotly, blueberry was very delicious.

I love a good snack Lorraine, anything that goes with a cuppa is very much needed in my house ATM ;)

  6. I love sweet snacks with a hint of lemon, and this one looks divine! Might have to give it a shot next time I want to make something bread-y :)

  7. I love this.
Wish I had a slice now with a cup of tea.

  8. Yum! What a refreshing recipe. You had me at "lemon". "blueberry" and "biscotti" just made it so much better. You're great. Thanks, Leah :)
