Strawberry and Pear Bread




My favourite thing to eat at the moment is a fruit bread. I have this whole routine around my little G for the day. Whenever she naps, I run around like a mad woman trying to get things done.

I love the weekends, it means I have my husband to help out with the little one, and I can get my bake on! I almost always have a fruit bread in the freezer, if not in the fridge. I love all sorts of combinations.

Today's was Strawberry and Pear. The berry's are just starting to have that lovely berry aroma again. This is when you know summer is coming, when a strawberry tastes like a strawberry, and not just an acidic, sour nothing BLERG!


1 1/2 cups wholemeal flour
2 teaspoon baking powder
1/2 cup brown sugar
1/4 cup shredded coconut
1/4 cup oats
2 eggs
2 tablespoon yoghurt
1/3 cup vegetable oil, I used a light olive oil
2 pears, keep half aside to slice for decorating the top 
8 strawberries, keep 2 aside to slice for decorating the top

Puree pears, eggs, oil and sugar together.
Hand mix the rest of the dry ingredients in a large bowl, then add the pear mixture, with the yoghurt. Roughly chop the strawberries and add the chunks to the mix.
Pour the batter into a lined loaf tin. Add a few slices of pear and strawberries, then sprinkle with a little coconut.
Bake in a 170C oven for about 45 minutes.

  1. Lovely looking bread Leah! And a great idea as I have a fridge full of delicious fruit, it's so good and plentiful at the moment,its hard to know what to do with itall! :)

  4. how funny - I'm eating some chocolate banana bread that I baked on the weekend whilst reading this - we're both baking fruit breads on the weekend when hubby's are home haha.

    This bread looks terrific btw :)

    I think I'd throw some Cinnamon on top of it too because I'm mad for it at the moment.

  12. This looks amazing i'm going to make it right now but i'm going to use some strawberries i had frozen for smoothies, hopefully it turns out ok. I made a banana & walnut bread the other day & it was a hit with my boys. Very excited to see how this one goes thanks
