Creamy Mushroom Gnocchi


Serves 4

1 small garlic
4-5 semi sundried tomatos, chopped roughly
3 large flat mushrooms, cubed
2 teaspoons grain mustard
1/2 glass dry white wine
1 teaspoon vegetable stock powder, I love massel
2 tablespoons sour cream
handful of fresh baby spinach
4 large basil leaves shredded

Packet fresh Gnocchi

Follow the packet directions for the Gnocchi. Get the pot of water onto boil.
Fry the garlic, sun dried tomato and mushrooms, in a little olive oil.
Add the mustard, stock powder and wine. Fry that until the wine has evaporated.
Add the gnocchi to the boiling water.
Next add the sour cream, spinach and basil. Turn the heat off and set to one side. Add salt and pepper to taste.
Take the gnocchi out of the boiling water, as soon as they float to the surface and add it to the creamy mushroom sauce.
I love to eat this with salty and creamy goats feta.
Serve straight away. Add a little more cream if needed, so they don’t stick together.

    2. Hey! We had it last night! My husband love it! And he is not hugely fond of gnocchi.
      I'll make it again, but probably use cream and not sour cream. I found it a little 'tart'? maybe is the word?
      Great though! I always love trying something new and liking it!!!
      I try to do something new every week.... Not often does that happen though...

      I know right, after baby trying to find the time to do anything is difficult hehe...meh worth it though.

    1. Oooh I love mushrooms, they tend to divide people, you either love or hate them. I believe it is the way they are cooked whether they taste great or not, or at least so they are NOT slimy!

  6. I love how creamy this looks even though it only uses a little bit of sour cream! I never grew up eating anything like this, but it does look lovely! mmmm mustard. :)

    1. yeah it is creamy, the sour cream is thicker than cream, so it tends to be a lot creamier than cream? Cream tends to just go oily in pastas and gnocchi.
